Professional Life

He worked at Baskin-Robbins and a pizza shop after dropping out of school. Then he went to work as a salad chef at a hotel that his father and Joe Allen co-owned. Joe volunteered to help facilitate his studies at the French Culinary Institute, where he finished with a first-class degree in 1984, after being impressed by how well he accomplished his work despite his lack of academic qualifications.

He was a sous-cook at Brighton Grill on Third Avenue until the executive chef was sacked and Bobby was forced to take his place. He realized how unprepared he was to manage a kitchen as a result of the role and chose to resign. Bobby Flay elected to return to the kitchen after a brief stint at the American Stock Exchange. Between 1988 to 1990, he worked as the executive chef at Miracle Grill, where he made a comeback.

The next job was in the same hotel, but this time it was Messa Grill. It was a watershed moment for him because its owner, Jerome Kretchmer, offered him a partnership soon after. The hotel was open till September of 2013. Bobby co-founded Bolo Bar & Restaurant with Laurence Kretcher, which has been closed since December 31, 2007.

He opened another Mesa Grill in 2020, marking the start of his many solo operations. He now owns 11 Bobby’s Burger Palace locations, two Bar Americain locations, Bobby Flay Steak, a third Messa Grill, and two Bobby’s Burger Palace locations.
