Pedraza competed in the 2007 World Amateur Boxing Championships but was defeated by Sadam A in the opening round (25:17). Jose competed in a dual versus France to end the year, but he was defeated by Daouda Sow (15:5). In the Torneo Nacional Isaac Barrientos finals, where he defeated Reynaldo Ojeda (20:11), he successfully defended his lightweight national title. At the American Olympic Qualifier, he made his debut by defeating Valentino Knowles of the Bahamas 20:4.
